Half Dipped Brownie Cookies

Take cookies to the next level, by dipping them in chocolate and adding extra sprinkles. Perfect for a day when you’re feeling the need for something truly extra, but don’t have loads of time. They also make a lovely home-made gift for a friend.

First up, bake your cookies. Pre-heat your oven to 190/170 Fan/Gas Mark 5, and take your dough out of the freezer and leave on the counter to soften for 5-10 minutes (this just makes it easier to slice). Take a sharp knife and slice the dough into pieces about 1cm thick, which will give you 8-10 cookies).

Line a baking tray with baking paper, arrange the cookies on the paper with space to allow for some spreading. Bake in the oven on the middle shelf for 8-14 minutes depending on how gooey or crunchy you like your cookies. Leave to cool on a tray or wire rack.

Now for the deliciously messy part. Melt 200g of white chocolate and choose your sprinkly toppings. We love pistachios, chopped nuts and extra chocolate curls (as well as colourful sprinkles for days when only rainbows will do). Really, anything goes! Dip half your cookie into the melty white chocolate and coat generously, then place on a wire rack. Sprinkle each cookie after dipping. Leave to set for 20-30 minutes (or however long you can manage), then dive in and enjoy.

For an extra special gift for a friend, wrap a few of these up in baking paper and tie with some colourful ribbons (obviously taking one for the baker first).
